Harvest: Manual during the second half of February. In the warehouse, a selection belt is used to classify the
clusters prior to the grinding process.
Process: Cold maceration for 12 hours. Alcoholic fermentation with selected yeasts for 25 days at a
temperature between 13 and 16 degrees. Aged in stainless steel tanks for 6 months with its fine lees.
