Harvest: Manual, during the second half of April. In the winery, a selection belt is used to classify the bunches
prior to the grinding process.
Process: Cold maceration for 7 days. Alcoholic fermentation with indigenous yeasts for 30 days with 3 delestages
diaries. Controlled malolactic fermentation. Aging in first-use oak barrels where the total wine is in contact
for 15 to 18 months.
Once bottled, it is stored for 12 months in underground cellars.
