Vineyard

Location: 50% Maipú / 50% Luján de Cuyo, Mendoza.
Soil: Sandy loam of alluvial origin.
Production: 110 qq/ha

Elaboration

Harvest: Manual, during the first fortnight of March. reception in
warehouse in bins.
Process: Cold maceration for 3 days. Alcoholic fermentation with
indigenous yeasts for 15 days with 2 daily pumpovers. Fermentation
controlled malolactic. Aging in stainless steel tanks where the 50%
of the wine is in contact with oak staves for 4 to 6 months.

Stowage

Once bottled, it is stored for 6 months in underground cellars.

CATA's notes

Red in color with violet reflections. It has aromas and flavors of red and black fruits such as blackberries, cassis and figs. On the palate it is round with soft tannins with a lasting finish that denotes its aging in oak. Ideal to share with red meats and our traditional empanadas. Serve preferably between 16 and 18 °C.
