Harvest: Manual during the second half of April. In the warehouse, a selection belt is used
for classification of the clusters prior to the grinding process.
Process: Cold maceration for 12 hours. Alcoholic fermentation with yeasts
selected for 12 months at a temperature between 13 and 18 degrees. aging in
French oak barrels for 6 months with its fine lees.
