Vineyard

Location: Maipu, Mendoza.
Soil: Sandy loam of alluvial origin.
Production: 120 qq/ha

Elaboration

Harvest: Manual, during the first fortnight of March. Reception in warehouse in bins.
Process: Cold maceration for 12 hours. Alcoholic fermentation with indigenous yeasts for 30 days, where the 30% was left together with its skins for 15 days.
Fermentation temperature between 14 and 16 °C. Aged in stainless steel tanks for 3 months in contact with its fine lees.

Stowage

This wine was gently filtered to preserve its best qualities, so it may contain a slight natural sediment.

Yellow with green tones. Presence of white stone fruits such as peach, pear and green apple. On the palate it is very unctuous, with a long finish that lasts thanks to its balanced acidity. Ideal to accompany an appetizer of humita to the plate with different types of salads or fish and shellfish dishes.
