Vineyard

Location: 85% San Martin / 15% Santa Rosa, Mendoza.
Soil: Sandy loam of alluvial origin.
Production: 90 qq/ha

Elaboration

Harvest: Manual, during the first fortnight of March. In the winery, a selection belt is used to classify the bunches
prior to the grinding process.
Process: Cold maceration for 2 days. Alcoholic fermentation with indigenous yeasts for 15 days with 2 delestages
diaries. Controlled malolactic fermentation. Aged in first-use French oak staves for 6 months.

Stowage

Once bottled, it is stored for 6 months in underground cellars.

Deep red in color. Intense aromas of ripe red and black fruits, spices and jams subtly combined by its aging in oak. On the palate it is persistent with great volume and soft and elegant tannins. Ideal to accompany a braised ossobuco or a stuffed rump tail.
