Vineyard

Location: Junín, Mendoza.
Soil: Sandy loam of alluvial origin.
Production: 80qq/ha

Elaboration

Harvest: Manual harvest during the second half of February. In the warehouse, a selection belt is used for classification
of the clusters prior to the grinding process.
Process: Cold maceration for 3 days. Alcoholic fermentation with indigenous yeasts for 15 days with 2 delestages
diaries. Controlled malolactic fermentation. Aged in first-use French oak staves for 6 months.

Stowage

Once bottled, it is stored for 6 months in underground cellars.
